After enabling One Page Checkout plugin, you have to manage settings in NOP admin.
path: /Admin/OnePageCheckout/Configure.
Select tab: Pickup point providers.
User can see list of active pickup point providers.
User can change Display order value of pickup point providers, which affects their order in checkout.
NB! Display order setting affects only pickup point providers order in checkout. You can not change the display order of other shipping methods.
